Meringues

This is an easy and simple recipe for a treat ! Plus you can change up the color and or shapes to fit halloween, valentine's day etc.
I decided to be colorful and made mine pink for Valentine's Day by adding a little bit of red food coloring.  These would also be adorable little ghosts for halloween !

Meringues

Ingredients
3 large egg whites
1 1/2 teaspoons vanilla extract
1/4 teaspoon cream of tartar
dash of salt
2/3 cup sugar

Preheat oven to 250 degrees
In a stand mixer bowl add the egg whites, vanilla, cream of tartar and salt.  Beat on medium speed until foamy.  Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved.  Continue beating until stiff glossy peaks form, this should take about 7 minutes or so. 
Using a pastry bag is one option, but I just dropped mine onto a parchment paper lined baking sheet.
Bake 45 minutes or until firm to the touch.  Turn off the oven and leave the meringues in without opening the oven
door for another hour. 
Cool completely on the baking sheets and store in an airtight container at room temperature .
