French Bread Spinach Alfredo Pizza

Here's and easy weeknight meal ! I like to use sub rolls as the french bread, but you could also use a pizza crust.


Ingredients:

2 sub rolls split in half
1 bag fresh spinach washed and dried
chili pepper flakes
4 tablespoons butter
1/4 cup flour
1 bag parmesan shredded cheese
1 block white sharp cheddar cheese cut in chunks
1 cup milk


Toast the split rolls in the oven at 350 for about 3 minutes or so, and remove.
 Make the bechamel sauce as follows: 
 add the butter to a pan until melted, add the flour and cook for 2 to 3 minutes.  Add the milk stirring with the whisk.  Add the shredded parmesan cheese and the block of cheddar cheese and the red pepper flakes,  cook until thickened.  If it is too thick, just add a little bit of milk.  Add half of the bag of spinach and cook for 1 minute longer.
Spoon the cheese and spinach sauce on the sub  rolls and top off with the rest of the spinach.
Bake for 350 for 5 more minutes and enjoy !
