Fall Cooking : Stuffed Porcupine Peppers
I enjoy the traditional stuffed peppers, but today I wanted to try something different !
I made meatballs with rice (porcupines) and stuffed the peppers, then baked and was it ever delicious! Here is the recipe, enjoy !
1 lb ground beef
1/2 cup rice
salt
pepper
cajun seasoning
red, green, yellow peppers
Combine the first 5 ingredients and make small meatballs. Bake at 350 for 30 minutes .
Cut the top of the peppers and clean the inside. Add the cooked meatballs and bake for another 45 minutes covered with foil and a little bit of water until the peppers are tender.
